Ultimate Recipe Swap: Cookies We Love


Whole Wheat & Germ Chocolate Chip Nut Cookies
makes 4 dozen
1-cup butter, at room temp
3/4-cup white sugar
3/4-cup brown sugar
2-eggs
1-Tablespoon vanilla
2 1/2-cup rolled oats
2-cups whole wheat pastry flour
1/2-cup raw wheat germ
1-teaspoon baking powder
1/2-teaspoon baking soda
1/2-teaspoon salt
1-cup chocolate chips
1-cup pecans, toasted & chopped

Process oats in food processor until ground to a flour.  Whisk together oat flour, ww flour, germ, baking powder, baking soda, and salt.  In another bowl, cream together butter and sugars until light & fluffy (('bout 3 minutes)).  Beat in eggs and vanilla.  Slowly incorporate dry ingredients.  Stir in chocolate chips and nuts.  Roll into tablespoon-sized balls and place on lined or ungreased cookie sheet.  Bake at 375* for 12-15 minutes.  Allow to cool 3-minutes before removing from cookie sheet.


I often freeze the dough before baking.  Just pop the cookie sheet into the freezer for five to ten minutes before tossing those cookie balls into a freezer bag.  Just for kicks, I store them by the dozen, pulling out one doz as a simple dessert when needed and baking just a few minutes longer.  We have six folks in my family, so everyone gets two and this Momma doesn't pick at the leftovers all the days following.  Plus, who doesn't prefer a cookie fresh from the oven, all crispy and gooey?!  I know I do!!

  4. This might be a dumb question but where do you find wheat germ at the grocery store and what is it? They certainly look good!
