This week is too hectic to be inspired, so I'm sticking to staples and faves. Really, I'm just using up whatever happens to be left in my icebox from the holidays, which is...food. So, whether we like it or not, it will be the staple and favorite of that day indeed.
Breakfasts
Soaked Oats, Clove and Orange Cream Scones, Yogurt, Fresh Granola
Lunches
Leftovers, PB & Banana, Fancy Ramen, Eggs (fruits & veggies)
Dinners
Monday~Crockpot Black-Eyed Peas with Smoked Turkey over Brown Rice; green salad
Tuesday: Garlic Chicken, Roasted Red Potatoes, Broccoli
Sis-in-Law's Garlic Chicken
1. Dip chicken into 1 cup milk placed into a bowl.
2. Dredge milky chicken into 1 part Italian-seasoned bread crumbs (easy to make-your-own!), 1 part grated Parmesan cheese, and black pepper to taste.
3. Place dredged chicken into a baking dish.
4. Combine 4-tablespoons butter and at least two-cloves smashed garlic into a small sauce pan; melt to blend over low heat; remove.
5. Add the juice of lemon to garlic butter; drizzle over chicken; sprinkle with Paprika.
6. Bake at 350* for 30 minutes, or until golden brown.
Wednesday : Whole-Wheat Spaghetti with Turkey Meatballs; green salad
Thursday: Chorizo & Eggs; avocado, orange, red onion & cucumber salad (drizzle with salted olive oil and fresh orange juice)
Friday: Grilled Steak Caesar Salad
Saturday: Frittata; green salad
Sunday: Bean Burritos
Hope y'all have a more inspired week. With starting a new school term, for which I'm not quite as prepared as I would prefer, and recovering from the busyness of the holiday season, I'm just plain pooped.
Boy, do I wish I had a week's worth of take-out in my budget and waistline!!
I always fancy taking a holiday in the first week of January because I need it! We started this week and I am certain I am more unprepared than you!! God carries us each day and I am certain that he has a plan. Leaning on Him this week - not as an excuse for not planning but because I have to!

ReplyDeleteAnd thanks for the encouragement. I keep trying to remember that not everything on my list need be done to have a fruitful week...and trying to keep His list atop mine own: love Him and others. I pray to have the strength and faith to chuck the list if it gets in the way!

ReplyDeleteUnkie's Ramen could be anything on any given day, but here's one of our faves:
However many ramen packets it will take to feed your clan (we use 4-5)
One egg per packet, lightly beaten
sliced green onion to taste
sesame seeds to taste
chili paste to taste (we pass this at table~little ones cannot take the heat)
wee bit of garlic
At the end of the noodle's simmer, stir the eggs and garlic into the pot; remove from heat; add seasoning packets to taste (we use all less one) and green onions; sprinkle or COVER with sesame seeds; add chili paste to taste. Eat with chopsticks for great slurpiness and a nice wet chin effect.
**And if you add a smidge of peanut butter in lieu of the eggs--voile!--Thai Ramen!
